Segureño lamb and other traditional dishes

Winter cuisine brings together foods and work associated with preserving provisions.

Pig slaughter and the preparation of cured meats and sausages were part of a household system in which products had to be put to use and the pantry stocked for the months ahead. This tradition is connected with other foods found in Galera, such as Segureño lamb and lata al horno. The name of the latter itself recalls the container used for cooking: utensils, too, leave their mark on the way dishes are named.

This stop invites visitors to understand food within its yearly calendar. Alongside the recipe are the time of year, the people who take part, and the ways food is shared and preserved. This is knowledge passed on through practice, which helps explain families’ everyday lives.
